Great Sketches. If you are going to go with the bakery truck idea, I would say to go with number 16. It has a memorable feel to it. The vectored/animated oven is not only cute, but very underrated. Many people forget to incorporate the oven which is what actually makes the food!
If you are going to go with the sandwich truck, I would go with number 3 or 13. The reason is because I feel like you can make a truck memorable if there is a character or a logo that can stick into your head. Creating a character for the truck would be a genius move. Great way to advertise outside of the truck too. I really like number three though because not only does the slice of bread look happy, but you know that it is a sandwich truck that can make a normal sandwich or a gourmet one.
There are some very nice designs on here. The idea of a bakery truck is definitely something I haven't seen before, and with a logo like #11, it would provide the truck with a unique design that relates to the process of baking. #11, in my opinion is a good choice because of the spatula and the lines [which I presume representing the baking mix]. It helps people identify the image with the idea of baked goods, and such an idea is critical because branding is important.
As for #12, the image of a cake is also a good idea but I feel may be a little too obvious. It may lead the audience to believe that it's just simply cakes. If you can maybe provide a few other images without taking away the focus of the "baked goods", it can draw more attention to people who are wondering what exactly is being sold.
Sandwich-wise, #3 is a very catchy design. The image of a happy sandwich is memorable and the happiness/smile associated with the sandwich connects with the audience on a personal level [it could mean that the food will lead to ultimate satisfaction]. #13, much like #3 in terms of concept similarities, is a nice idea but I feel it could a little refinement. It doesn't appeal to me as much as the Happy Sandwich does. While it reminds me of Domo, I don't feel a strong attraction to it. A little editing can possibly turn this into a more attractive image just like the Happy Sandwich.
There are a number of nice designs here that can be very effective depending on what kind of food truck you end up choosing. Since you mentioned going with sandwiches for now, I'll start with that one. I think number could be an effective logo for a sandwich truck. The fact that it is a sandwich may make it slightly literal, however the way you end up incorporating type could change that. I like the stenciled approach that it has and I think that approach could be great for the final logo.
With regards to your bakery idea, which I think is really smart, my initial favorite was number 12. It had a great feel to it, full of energy. But after reading Soothseyer's comment I would have to agree that while it looks nice, the cake might lead people to believe that only cakes are being sold. I know you mentioned number 13 as being for a sandwich truck, but I think if you worked with it a character logo would work great with a bakery truck. I'm not sure if you intended it to, but the character on number 13 has a cute, fun look to it, which I feel is better suited towards a bakery. Sandwiches feel like a much more serious food; the purpose being for health. Whereas a bakery has a more free feel to it, because those items are eaten for pleasure.
Number 14 looks like it would work as a logo the best. It isn't obvious as to what it is, but that is what makes it interesting. The other sketches are nice and well done, but it might be complicated to reproduce them as logos because they are more detailed.
Very nice sketches, two sketches i like from the bakery idea are #11 and #12. I like the organic look you did with the swirls, the unique forms in 11 helps displays movement to the logo, such as mixing. I think it would help a lot more if we got to see typography and the name of the brand...
As for the sandwich idea, #'s 2 and 3 caught my eye the most. I like the movement and speed shown in #2... feels like its a hot sub on fire.... and 3 has a simple and happy look, but it kind of reminds me of a peanut butter jelly sandwich, maybe you can go with that idea?

A type of mascot can be a memorable identity for a food truck. For refinements may be you can try having type present and the name of the business to have a better sense of the business and overall have better logo ideas.
For the bakery concept # 11 and #12 is a route you can take, #11 has great movement and has a lot of energy and that can reflect the way people look at this business. # 12 is also a route you can take it's a symbol that everyone can recognize may be you can have a silhouette of just a part of the cake to make it more personal
I like the sandwich truck idea in #1 and 2. the food making a image that looks like a food truck in motion is cool. I don’t know about the fork and spoon looks to much like a sit-down deli logo.

Number 3 and 13 might scare people off a bit. With a friendlier expression they could both be successful.
Number 5 would make for a clever and interesting logo in my opinion.
A lot of the images might make for some nice artwork but on their own they might make it difficult to tell what the food truck is for specifically. Combining several of the food images might do the trick.
